The Roman Snail

The Roman snail is common around us. It is large, much larger than the common garden snail, known to all British gardeners. the French call it the Burgundian Snail. I have been told that it is a protected species, but I have failed to find any documentary support for this.

The French tell me that this Burgundian snail is not the preferred one to eat. They prefer the garden snail. If you go to a classy delicatessen in the U.K. and buy snails then you are more than likely to be served this large tough creature. You can instead cultivate your garden snails and enjoy them!

I suspect that they only taste of the garlic and herbs with which you cook them anyway.
